Fruited Chicken Salad

I got the craving for chicken salad when I read Jane-Marie’s post for sweet chicken salad on her blog – Making Stuff is Fun. This is a great sweet and fruity version that of course comes from my mother-in-law’s kitchen. Maybe Jerrie should just start her own blog as I would say half of my recipes come from her! It is so much easier re-making her meals as she actually follows recipes unlike my parents. 🙂

Fruited Chicken Salad

Ingredients:

4 c chopped/shredded cooked chicken (I used food processor to get it chopped faster)
2 c diced celery
2 c halved grapes
1 15 1/4 oz can crushed pineapple (drained, reserve juice)
1 can mandarin oranges (drained)
1 c slivered almonds, toasted
1/2 c light mayo
1/2 c light sour cream
2 T lemon juice
1/4 t salt
1/4 t white pepper

Directions:

1. Combine chicken, celery, grapes, pineapple, oranges, and almonds. Toss well.
2. Mix mayo, sour cream, lemon juice, salt and pepper. Add to chicken mixture and stir well. I then typically add in a little of the reserved pineapple juice to give it a little extra sweetness and moisture…you be the judge.
3. Chill for a few hours or make the night before. Keep refrigerated.

I hope you enjoy this recipe – feel free to add or remove any fruits. I typically leave out the oranges, and definitely the almonds because Kris is allergic. Instead, we eat it with wheat thins, pita chips, or crackers in order to add a little crunch.

    OH yeah, this definitely sounds good. I’m pretty sure my husband will be in to it as he likes most vatiations on the chicken salad. Also side note, I’m pretty sure there was some incident at my house when I was a little kid where Kris accidentally ate a nut. I’m having a vague memory of it though so I may have made that up.

      I think I’ve heard the story about Kris getting sick at your house due to nuts. I’m sure it is everything you are remembering…ha. Glad I wasn’t there!
