Chicken Tortilla Soup

My favorite soup is the tortilla soup at California Pizza Kitchen. Unfortunately, this soup is nothing like that but still delicious. I would describe this more as a chicken chili, but it is pretty easy to make and perfect for fall football watching.

Chicken Tortilla Soup

Ingredients:

  • 2 chicken breasts, cooked and shredded
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 2 to 3 cloves garlic minced (or a spoonful of the jar of minced garlic)
  • 1 can Rotel Original
  • 2 cans chicken broth (approx 4 cups if using homemade or water/bouillon cube)
  • 4 cups water
  • 3 T tomato paste
  • 1 can black beans, rinsed
  • 1 T chili powder
  • 1 t cumin
  • 1 t salt
  • 1 t garlic powder
  • 6 corn tortillas
  • Toppings to garnish – crispy tortilla strips, sour cream, onion, tomato, avocado, cheese, cilantro, etc

Directions:

  • In large stockpot, saute onion, garlic and peppers until soft/translucent. You can add oil if you want but I usually omit.
  • Add in chicken and spices and cook another minute or two.
  • Mix in Rotel, chicken broth, water, black beans, and tomato paste. Simmer on medium or medium-low for an hour or so until soup reduces and thickens. Taste and see if any additional spices are needed.
  • Prior to serving, cut up corn tortillas into strips and stir into soup. Allow to simmer 5 minutes or just until soft.

Next time I might add in some frozen corn for an additional veggie. Let me know if you make any additions/substitutions.

    Sounds deliscious Emily. I will plan to make it, but think I will substitue 2 jalapenos for the green pepper. I like some warmth to my soups might even add some green chilies. What do you think?

      Jalapenos would be good…especially if you like it spicy!
